The role:

To assist Finance & Operational Departments in monitoring, reporting and controlling of F&B cost of sales in multi-site restaurant group to ensure that all measures, targets and standards are achieved to the highest standard in a professional and efficient manner. Responsible for maintaining financial records and carrying out administration duties in relation to finance.

Responsibilities:

  • Assist Department Managers in all aspects of purchasing (e.g. Food, Beverage etc) to ensure quality and profitability;
  • Assist Department Managers in maintaining or reducing cost of sales margins to target;
  • Maintain a strong accounting & operational control environment which improves operations and profitability and manages business risks;
  • Maintain inventory controls for proper levels, dating, rotation, requisitions, etc;
  • Ensure all F&B entries (invoice closure, stock takes, credits & requisitions etc) are closed off in a timely manner by site teams with accurate information;
  • Participate in Month End Stock Takes and act as main liaison with site Management;
  • Issue meeting minutes for final wrap up and ensure all audit action points are followed through with relevant parties;
  • Perform weekly Key Line Checks and send report to relevant Department Heads and follow through on any investigation points;
  • Ensure Nominated Suppliers are used throughout the group and correct procedures followed for any deviation;
  • Monitor Food Purchasing process and make recommendations for efficiencies, cost saving (i.e. avoiding delivery charges, split vs bulk orders etc) and support as needed;
  • Reconcile supplier statements to accounting records and resolve any variances;
  • Prepare reconciliations of balance sheet stock to recorded stock to ensure accounts accurately reflect what is being physically held in stock;
  • Keep F&B system up-to-date with correct products & prices, recipes/costing and PLUs. Assist F&B managers and Executive Chef with menu reviews and product updates;
  • Monthly issue Sales Mix reports for all Food & Beverage Outlets, highlighting opportunities with menu engineering to relevant Department Heads.

To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • Proven experience in a similar role, preferably in corporate hospitality;
  • Possesses strong organisational skills;
  • A good understanding of financial operating systems and procedures;
  • Exceptional financial and numerical skills and impeccable attention to detail;
  • Strong influencing, inter-personal and communication skills;
  • Excellent analytical skills;
  • Willingness and flexibility to respond and adapt to a range of different work situations

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Xero system knowledge preferred
  • Previous Accounts/Finance experience
  • Experience with E-POS systems
